Make spring onion oil: Heat ¼ cup oil in a small saucepan over medium heat. Add all the sliced spring onion and mix well for about 30 seconds or until softened. Take off the heat. Put 2 tablespoons aside for the grilled pork dish.

Prepare bánh hỏi: Separate the fresh bánh hỏi noodle, layer them in a platter, brush with spring onion oil, and place another layer on top. Sprinkle with some fried shallots. Cover with plastic wrap and microwave on medium for 90 seconds just before serving.

Final preparation: Finely chop garlic and chillies, mix them into dipping sauce. Cut the cucumber into baton. Arrange the vegetables and pickle in a big plate. Prepare a bowl of water for rice paper.
